Chinese Fried Dumpling ( 煎饺子)


Fried Dumpling

Serving 4 person

Ingredient A
400 g ground pork
300 g cabbage
1/2 teaspoon salt
1/4 teaspoon sugar
1 tbsp sesame oil

Ingredient B
100ml water

Ingredient C
40 Dumpling or gyozo skins
cornstarch for dusting

Filling
1) Clean the cabbage, cut into small pieces.
2) Mix the sliced cabbage with Ingredient A in a big bowl.
3) Slowly stir in 100ml of water into the mixture.
4) Rest the mixture in fridge for 30 minutes.
** You will find out the meat is juicy after that.

Finishing

1) Place 1 tbsp of filling in the center of each dumpling skin.
2) Moisture the edge with water, fold over to enclose the filling and press the edge to seal.
3) Transfer the dumpling to a tray that has been dusted with cornstarch.

Cooking

1) Heat a wok or a deep skillet and add some sesame oil. Heat to 350 and add in 8 to 10 of the
dumpling.
2) Add half cup of water and cover the pan. Cook/boil until the water is dried and the dumplings'
colour turn golden.
3) Repeat the process for all the dumplings, reheating oil between batches.

Serve the dumplings warm with your ideal sauce. (\(^_^)/)

** Prawns can be added in the ingredient to add texture of filling.

Lime & Mint Juice

Lime Mint Juice


Serving: About 2 cups

Ingredients:
7 teaspoon Sugar
400 ml Water
4 leaves of fresh Mint
Juice of one medium sized Lemon
1/5 portion of an Apple peeled and sliced in small pieces.

Step to follow:
Place ingredients in a food processor or blender and puree.
Refrigerate for at least one hour.
**note :When serving, strain through a fine sieve (or coffee filter). Discard leaves.

Serve over with ice with mint leaves and lime slices
Variation: Use SPRITE or Seven-Up instead of Water & Sugar as the mixer.

Milo Agar Agar










Milo Agar-Agar


Chocolate Layer:
13 gm agar-agar powder
1100 ml water
200 g sugar
12 tbsp MILO powder
** I use HappyGrass jelly powder

To prepare chocolate layer:
Cook agar-agar in water till dissolved Add sugar and MILO, stir well to dissolve sugar; strain. Spoon mixture into a 20 x 20cm square pan or any desired jelly mold.
Allow to set, then lightly scratch surface with fork.

Milk Layer:
13gm agar-agar powder
700ml water
200 g sugar
400 ml CARNATION Full Cream Evaporated Milk
A few drops of vanilla essence

To prepare milk layer:
Cook agar-agar in water until dissolved.
Add sugar and stir well until dissolved; strain.
Stir in CARNATION FuLL Cream Evaporated Milk and essence.
Carefully spoon milk layer over chocolate.
Chill until set. Serve cold.
